This Cucumber Salad recipe is off to a good start but...

Thanks for a good start of what could be a great salad!
I just made this salad, per the recipe.
The ingredients are great together! However, it didn't look anything like the picture and there was WAY too much dressing and the dressing was too sweet.
I'm going to modify it and try again... 1/4 cup oil, a tsp honey, lime instead of lemon, no cashews.

Easy ways to eat raw at restaurants!
Eating out raw is not that difficult. You can bring some of your own staples along with you and and combine with these ideas:
Mexican: Pica di gao (chopped tomato and cilantro with lime juice - not spelled correctly) and guac and any other veggies that usually come on the side with fajitas Japanese: Seaweed salad and veggie rolls without the rice Thai: Spring rolls (not eating the wrapper of course) with dipping sauce, papaya salad, mango salad (YUM) American: Iceberg salad with olive oil and lemon juice/balsamic vinegar
*These suggestions don't require any special requests from the restaurant, but if you don't mind doing that, you can always ask for veggie sides raw at any restaurant.

Starting off
I started off with doctors orders, right away, just jumped in...first few days were really tough, after that, it's really not that tough, you begin to adjust and add new things. I would say I am 90 - 95 % raw food, occasionally I will add a tablespoon of tuna to a salad and I still have my coffee, everything else is raw. Maybe as I get more equipment and learn new recipes, I can go 100%, but otherwise things are going great!

How to Eat Out
When you go to a "mainstream", i.e., non-raw, restaurant, most often you can get a salad.
Okay, it might not be organic... if that is going to be a major issue, don't go.
Chain restaurants often cannot help you much in the way of salad -- everything they get is
pre-prepared and comes to the kitchen in bags or portions.
Here is an idea I got from Raw Foods News Magazine:
If you are so inclined and very organized, make a list of vegetables
which would be agreeable for you in a salad.
Be kind of specific, but also kind of open - like: greens, such as spinach, lettuce, etc. ( You won't know who you are dealing with in the kitchen -- are they thnking people? Creative? Decide how much you want to spell out!); red bell peppers, onions (specify if you like); celery; mushrooms; etc. and so forth -- this is your list of possible inclusions).
You can print off this list and carry it with you and ask the waiter to take it to the chef.
You can ask for lemon juice and/or extra virgin olive oil on the side.
I've been lucky -- I've been able to get plain salads without having to importune the chef -
still, I think the list idea is kind of nifty-- I just don't think I could go around passing it out, myself.

I love Raw Foods
I am a weight loss consultant and have found that most people don't like to eat raw healthy foods. Instead they want to poor gobs of salad dressings and butter on top. Great information I will use it.
