I am still so in love with my Excalibur dehydrator. I got it because I tried some raw crackers when I was on a low carb diet, and felt they would fit in well with my regimen. Then I went raw, and I really wanted the dehydrator because I really wanted those crackers. The first things I tried were vegetable chips. Those did not work so well for me. Then I tried some cracker recipes, and I have not looked back since. I have tried quite a few recipes, and have found two or three that I really like, that I make all the time.The thing about the raw food crackers is that they are high in fiber (at least they are the way I make them with ground flax seed as a binder), and rich in nutrients (not like plain flour crackers), and, if you use nuts in them, they can be high in protein as well. They are also quite filling -- some days I take a container of crackers and a container of my favorite nut "cheeze" with me for lunch. Yum.
I keep thinking I am going to make something like a burger with my dehydrator, but I haven't gotten around to it yet (I usually just eat the burgers before I can get them to the dehydrator.
I love my Excalibur. It cost a little more than other dehydrators on the market, but I felt safe in that it had a 10 year warranty, and it came with the teflex sheets.

I've heard people do a lot of drying fruits, but can you do anything with vegetables? I'm not sure I want to spend the money if all I ever make is dehydrated apples and bananas...
